Pumpkin Protein Muffins

These yummy muffins include complex carbs, protein, and a bit of healthy fat. Make them for a busy-day snack.

 

Ingredients

1 C Canned Pumpkin

1/3 C unsweetned Apple Sauce

1/2 C diced Apple

1/2 C Greek Yogurt

3 Egg Whites

1 C rolled Oats

3/4 C Almond Flour

1/4 C Vanilla Protein Powder

1 C Splenda

1 tsp Baking Soda

1/4 tsp Salt

1 1/2 tsp. Cinnamon

1/2 tsp Pumpkin Pie Spice

1/4 C chopped Walnuts

Directions:
  1. Preheat oven to 350 degrees.
  2. Combine all ingredients in a blender until oats are well ground.
  3. Pour batter into muffin tins and bake for 15-20 minutes or until a toothpick comes out clean.
  4. Allow to cool and then serve.
